To me, everything good we’re trying to manifest in the world fits under the umbrella of health. And yet, we need to drastically accelerate health for both the planet and all people. We’re facing an increasing epidemic of chronic disease totaling about 133 million Americans. Type 2 diabetes is rising steadily, as is Alzheimer’s. The standard American diet is killing us, and we’re aggressively exporting the unhealthy menu of mass-produced products.

It’s time to wake up and see the impact of what we’re putting on our forks. Stress and lack of sleep and sufficient exercise is exacerbating the epidemic. There’s also a close connection between eating well and lessening climate change and water depletion.
